Fruit and nut mini Christmas Pudding bites recipe
Makes around 15
Ingredients
280g mixed dried fruit soaked overnight in the juice of half an orange (and a little sloe gin or brandy!) We used equal quantities of dates, cranberries, raisins and sultanas
250g toasted nuts, whizzed in a processor until ground (or leave a little texture if you like). We used whole almonds and pecans that had been toasted in a 180C oven for 5 minutes
Zest of one orange and one lemon
1/2 tsp ground cinnamon and a good grating of nutmeg
150g icing sugar mixed with a good squeeze of orange juice

Hide AdWhizz up the fruit in a processor until finely chopped, add the ground nuts, zest and spices and combine
Form into small balls and place in the fridge to set
To make the icing, mix 150g sifted icing sugar with enough orange juice to make a thick paste then drizzle on top (start with 2 tbsp of juice and add as required)
Finish off with a few thyme leaves for decoration
